For 4 servings, you’ll need:
1.5 to 2 lbs salmon fillets (fresh, skin-on or skinless)
1.5 tbsp honey
1.5 tbsp Dijon mustard
3 cloves garlic, minced
3 tbsp olive oil (divided)
1 tbsp lemon juice
1 tbsp fresh chopped dill
Pinch of sea salt
Set your oven to 400°F (200°C). Line a baking sheet or roasting pan with aluminum foil for easy cleanup.
In a small bowl, whisk together:
Honey
Dijon mustard
Garlic
2 tbsp olive oil
Lemon juice
Dill
Salt
Brush salmon fillets with 1 tbsp olive oil on both sides. Lay them skin-side down on the foil-lined pan. Generously brush the top with your honey mustard glaze.
Bake for 8–10 minutes, depending on the thickness of your fillets. The salmon should be just barely cooked through with a slightly rare center—it will finish cooking from residual heat after it’s out of the oven.
